Pork Is Good - Andy Hampshire, Executive Chef

I have an addiction to pork and everything about it.

Lots of people think that a pig is a dirty animal. In fact, pigs cool themselves using water or mud during hot weather. They also use mud as a form of sunscreen to protect their skin from sunburn. Mud also provides protection against flies and parasites. A pig will live in any condition and it’s up to the farmer what those conditions are. Pigs are foraging animals, primarily eating leaves, grasses, roots, fruits and flowers. But, they will eat anything if it is put in front of them.

In the restaurant, we use a brand of pork called Berkshire Pork. Berkshire pigs are said to be "Britain's oldest pig breed," originally bred in the Faringdon and Wantage regions of the English county of Berkshire (now Oxfordshire).  These pigs are fed a full vegetarian diet and are let loose in the pasture to roam.

You can eat pork on just about anything. There is a donut shop in LA that has a bacon and maple donut! I‘ve even created chocolate covered bacon. Bacon is one of the most universal food items sold today for breakfast, lunch, dinner, snack, on a sandwich, or on a baked potato.My addiction to pork started when I was very young. Growing up in England, I ate a lot of pork. One of the first memories is the Full English Breakfast. This is a pork lovers dream:

2 pieces of bacon
2 big pork sausages
Black pudding (a fried tube of meat made out of pork fat and pork blood)
Fried mushroom
Grilled tomato
Baked beans
2 pieces of toast with about an inch of butter

Another favorite is sausage rolls, a savory pork sausage wrapped in flaky pastry and baked till golden brown. I used to get these from the local bakery on a Saturday or Sunday morning. And finally, Pork Pies the old English classic. You take ground pork and spices wrapped in warm water pie dough and bake until golden brown. Then in a little hole in the top you pour in reduced pork stock to make a seal all around the meat and between the pastry so it sets and forms a jelly. These are best eaten cold, UNBELIEVABLE! 

To round up I love Pork so much, I have a tattoo of a pig on my right bicep. From the head to the tail you can eat the whole thing.

The Great Outdoors

Clipas: A Perfect Purse Invention

Do you ever take a second to think about where your purse has been?  If you are like most ladies, that purse follows you wherever you go, picking up all kinds of germs along the way.  In 2006, Elisabeth Leamy, a reporter with ABC News and Microbiologist Chuck Gerba, found that women’s purses are a Mecca for organisms that make us sick.  "We found fecal bacteria you normally find on the floor of restroom.  We found bacteria that can cause skin infections on the bottom of purses. What's more amazing is the large numbers we find on the bottom of purses, which indicates that they can be picking up a lot of other germs like cold viruses or viruses that cause diarrhea."  Coli form bacteria, was found on half of the bags tested.  Translated, that means half of the bags tested showed possible signs of human or animal waste.  Thankfully most of us do not lick our purses!  However, placing that germ infested purse on your dresser, kitchen counter or table just transports those undesirables to another surface.

So what’s the solution to eliminating those pesky parasites? The most obvious solution is being aware of where you throw your purse.  Floors are never a good idea.  We’ve all been there, you’re in a restaurant bathroom, the door won’t shut properly and the purse hook has been yanked off the wall.  So unless you hang your purse around your neck it’s going on the floor.

Impact Alignments

The following are the alignments that you should strive to achieve (Right handed golfer):

Flat Left Wrist
o A must in every swing.  This is the #1 alignment in golf.  If the left wrist is not flat at impact then it is nearly impossible for us to get the club to low point.
o If the left wrist is flat then there is also a good chance that the clubface is pointing at the target.

- Clubshaft slightly ahead of the ball
o Clubs are designed with the shaft leaning forward.  That is the true loft of the golf club.
o When we contact the ball with the shaft leaning backwards we are adding loft to the club.  We have just turned a 6 iron into a 7 iron.

- Left arm extended and connected to the left chest
o With the left arm extended this ensures that we have maintained our swing radius and with the left arm connected to the left chest this keeps the body and arms working together.

- Majority of the weight on the left leg
o Remember the low point of the swing is under the left shoulder.  If the weight is on the right leg at impact then our low point has moved back and we will hit behind the ball.  I have never seen a great player with more weight on their right foot than left at impact.

- Right forearm and clubshaft for a line
o From a view down the target line, the right forearm and shaft should make one line.
o This alignment provides support into and through impact and helps us keep the golf club on plane.

- Head is between the feet
o When our head stays between our feet this allows us to have the proper amount of axis tilt with our spine during impact.

- Shoulders and hips slightly open.
o Hips will be open more than the shoulders.  How much they are open will depend on the type of ball flight you are wanting.

Shopping tips for fresh local produce

Tomatoes, Ozark or Arkansas, in my opinion are some of the best in the country. They are great because of the rich soil they grow in and the good amount of sun they receive over the summer. The tomato is a sun loving fruit. These tomatoes are so good most people can eat them like an apple with a little bit of salt. One of my favorite sandwiches in the summer is a sliced tomato on wheat bread with a little mayonnaise and salt and pepper, or a BLT with avocado on toasted wheat bread.

The best place to buy these tomatoes will be your local farmers market. Most of the tomatoes are grown by local farmers in a field not in a hot house, which is your best option.

Look for tomatoes that are a little gnarly and not uniformed. Also, when you squeeze them they need to have a little give, this means they are ripe and ready to eat. If you are not going to eat them right away you can buy them a little firmer and store them on your window sill. NEVER store tomatoes in the refrigerator. The perfect place to store them is on your window sill until they are ready to eat.

So if you have not eaten a good tomato in years and you live in the Ozarks get out to your local farmers market and enjoy all there is to offer.

 

Segways & Nature - A Great Combination

Dogwood Canyon now offers segway tours, a unique and environmentally friendly way to connect with nature.  The segways provide a way for you see the park from a different aspect then the tram tours, walking, or biking the trails.  Anyone 10 years or older can ride the segways, and they are super easy to use! 

 

During the Glory Hole Tour, your guide will take you past Hope Chapel and share with you the rich history of the canyon.  The segway tour allows everyone a chance to get close to Thunder Falls and the Great Spirit Rock Shelter, two immense, natural waterfalls.  A great photo opportunity! On the way back, once you have had a chance to see all of the sights, you might just get a chance to really see how fast you can go on the segway!  But never worry, safety is always our main concern, and helmets are always worn.  After the 90 minutes fly by, the tour ends at the Glory Hole, where you will get to see your guide feed trophy rainbow trout.

Dogwood Kids Kamp

Day one of Dogwood Kids Kamp was a major success!  We enjoyed a beautiful day at our campsite, which we set up ourselves (pitched our own tent and everything!)  We enjoyed our fabulous lunch of hot dogs, roasted over the fire we built.  We learned fun facts about camping and about Dogwood Canyon.  We ended our lunch with some delicious smores and banana boats also roasted over the campfire.

After we cleaned up our campsite, we headed down to Glory Hole with a bucket of fish food.  Standing next to the waterfall, atop the balcony, we threw handfulls of food down to the anxious trout and watched them swarm the area gobbling it up!

 

After and adventurous day at Dogwood, we packed up the van and headed on home, but not without learning the Dogwood Kids Kamp Song!  We sang all the way back to Big Cedar Lodge!
